Where can I change the default Themes text and Icon colors?

Hi,

Could someone point me in the direction of where to make color changes to the default Themes. When I use the browser inspect I see all the "min" css files which are kinda hard to make changes to when opened in an editor window as the changes do not stick and locating the lines in the browser debug/inspect window is hard in the "min" css files..

Is there a normal css file somewhere that the color changes can be made to? Somehow the default Themes text and icon colors all come out white both in our template and in Protostar so I need tochange them to a darker color in some places, I just need someone to point me to the correct files to make these color changes.
