Icon override (non css structure)

Hi Team,

I found there are some icons (eg: apps icon) are using "img" to call for icon face (non-css); I would like to get some good suggestion to replace the icon (eg: template override? which path should I use?), other than just replace the jpg/png file in the media folder.

If I can use template overrides, which path should I use for these icons? (see screen-shot)
