I have one question about the Custom Fields in here

I want my users whom sign up into every one of Profile Type can access it this App.
1- And your message under the box need us to select any profile type to use it, do I need to open all the app in there and select any my profile type if I want use to use them because there are a lot of APP in Custom Fields.
2- And what is Access Control...?
