Default Registration Profile

I'm trying to make the ES profile type more prominent in the registration process. People have a tendency to just use the default profile even when there are more appropriate choices. That said, is there a way to NOT have a default profile and force a member to choose one?

Also, Is it possible to change the font size/styling just with the Choose your Profile question? without affecting the other registration questions? Again, I'm trying to figure out how to make the Profile choice stand out.
