I suspect that we can not define the tab label for the custom fields. It would be nice if that was possible.
Incidentally, this is possible in the Joomla Core, and a powerfull extension like ED should not offer fewer options for the same functions than the CMS on which the extension is based, unless there are special reasons for doing so.
