Can I do this?

Hi Guys - just wondering if it's possible to;
1. display subscribe via email on the category tab page instead of RSS - if I turn RSS off then I don't get email option on this page?
2. Hide the users tab for certain user groups - only want member list available to site admins.
3. Where do I find the templates to customise notification emails via FTP? See attached PDF for sample of what I want to do with the emails.
