- Please, Can we change the order of the applications (Example: 1. EasyDiscuss 2. Link 3. Surveys ...)?

Unfortunately that was not possible to re-order those application icon from the story panel.

- What path do I need to follow to rename application names?

You can update these following language translation into your Joomla language override section.
