Currently we have our notifications setting 'Notify Every Site User On New Posts' to on.
We would like to remove this and replace it with a notify all users to one of our EasyBlog categories. In our case it is the main news category, Club News. Other categories the user can sign up to or not.
The only way I can see how to do this would be to do some SQL query against the Easyblog datasets.
Is there another way (without involving our users) or would I have to go through the SQL method?

Regarding your inquiry in order to achieve it, you need customize some files. I am really sorry but unfortunately we cannot accommodate your request currently as it is quite difficult to achieve and beyond our support scope's policy as outlined in https://stackideas.com/support.
However, you can go through function sendSubscribers in the file:
.../administrator/components/com_easyblog/includes/notification/notification.php
