Actually the setting (Settings > Layout > General): https://www.screencast.com/t/0bcWKIvgcxuL is for single category layout. Where there is no setting for sorting Categories layout as per your screenshot (fotobox1).
However, can you download the attached file and replace in the folder(where I'm not really sure you want to sort category or post):
.../components/com_easyblog/views/categories/view.html.php
and see how it goes?

You're suggested to backup the file that you want to replace beforehand for precaution

I want the articles sorted alphabetically within the categorys - after replacing the file above the sorting of the articles didn't change but the sorting of the categorys is gone, so this is not the right solution. Is there no way to sort the articles by title?
