Is there a way, or has anyone created a way for users to be able to select groups that they want to join during the registration process?

We do not have this feature at this point of time, I think your request is similar to this feature request posted by someone https://stackideas.com/voices/easysocial/item/181-joining-groups-tool-in-the-registration- , if yes, you can vote it.
