On joomla backend enter the Easyblog component settings and select Mail Activities and next E-mail templates. There you can find the php files that you want to modify. For example the New post notification is the post.new.php file where you will find the background value <td bgcolor="#ffffff">

For changing the logo on the mail notification Easyblog panel > Notifications > General on the bottom you will see the email logo

I'm not sure what you mean by 'newsletter'.

You can turn off new blog post notifications at Settings>Notifications>Blogs.

Featured post notification cannot be turned off unfortunately. But if you want to disable all EasyBlog email notifications, simply remove any cronjobs relating to EasyBlog and disable the 'Send E-mails during pageload' setting under Settings>Notifications>General.

It is not possible to import a mailchimp email template into EasyBlog. You would have to manually edit EasyBlog's email template files to customize any of EB's email template.
