I am really sorry for the delay of this reply as it is a weekend for us here.
Unfortunately it is not possible to assign a moderator for a post automatically when the user create new discussion.

If you turn on "Moderate all new posts" while you set the category permission to specify user or user group "Who can moderate this category" ( http://screencast.com/t/cimnQJZTlA ), when the user post a new discussion, it will automatically send the email notification to the who assigned this category that moderator and superuser.Hope this help.

Really, this feature of assigning automaticaly a moderator to a category is strongly missing.

Six years without permitting this (old) functionnality, is there any explanation ?

In Easydiscuss 4.x onward we no longer allow admin to set specific user from the category moderate permission.

If you would like to assign to specific user to be your category moderator, you can manually create a new Joomla user group then assign this specific user into this group, so you can able to select this user group under category moderator permission section.
