In addition I have replaced the logo situated in the wireframe template.. still getting the easydiscuss logo in the emails

Where did you place the logo? Ideally you should upload it into /templates/JOOMLA_TEMPLATE/html/com_easydiscuss/emails/

By the way, adding the logo doesn't affect e-mails that are generated prior to your changes. It will only affect on newly generated activities.
