Where is the setting to set the default logo used in all email notifications? I see the email templates refer to $logo, but I can't find the related setting.

Unfortunately, EasyDiscuss does not have email logo settings yet, but we do plan to add it in the next major release.
For now, you would have to override the logo via template override: documentation
