You do template override on both avatars and covers photos as you can see below:
Cover photos

But, it seems that there are some issues regarding doing template override for avatar. I have made some modifications on this file .../public_html/administrator/components/com_easysocial/tables/defaultavatar.php. This fixes will be included on our next release version.

Or you can set it normally for your avatar by going to Backend>Components>EasySocial>Profile Types>*Your profile types>Default Pictures as shown http://prntscr.com/cx20rv as stated on documentations here https://stackideas.com/docs/easysocial/administrators/profiles/default-avatars

Please give it a try and see how it goes.
