I went to the documentation section of your website. I did a search for polls. Nothing comes up in the documantation. Where is the documentation located?

The documentation for EasyDiscuss is located at https://stackideas.com/docs/easydiscuss/ but if my memory serves me correctly, we don't actually have a documentation for the polls but may I know what are you trying to achieve here?

Are you trying to enable polls on the site? You can turn it on under the Settings area at Settings > Tabs as you can see from my screen shot here, http://take.ms/hgxkj

For example, if I have Yes, No, and Undecided options, how do I set the default choice to undecided?

Unfortunately, these are not possible currently.
How do I prevent users from voting twice in a poll?
If you are referring to users changing their response, then unfortunately there is no setting to prevent this.
If you are referring to preventing multiple responses, this can be done at the polls setting section(http://take.ms/DGDyy).
How do I include multiple questions in the poll?
Each question/reply can only associate with one poll. This means that you have to create multiple replies with their respective polls if you want to have multiple polls in one discussion.
