I found the page that lists the built in themes here http://stackideas.com/docs/easyblog/layouts/182-themes-templates-layout

but the page does not explain how to activate those themes. Nor can I find a page that explains how to do that. Can someone please help me or direct me to a page with the instructions on how to change the default templates that come with EasyBlog?

You should be able to see the page from the backend>Easyblog>Themes: http://screen.stackideas.com/2015-01-26_2359.png or access using this URL: http://www.yoursite.com/administrator/index.php?option=com_easyblog&view=themes If you still can't access it, can you provide us your backend and FTP so we can have a better look here?
