Where can I set the number of images that users can upload?

You can set the number of images that users can upload by going to Backend > EasySocial > Users > Profile Types ( edit the profile type you want ) > ACL > Photos > Maximum photo upload.

Also where can I set a maximum file size per image?

You can set a maximum file size per image by going to Backend > EasySocial > Users > Profile Types ( edit the profile type you want ) > ACL > Photos > Maximum file size .

Can the system be set to automatically resize the images that are over the size limit or does it have to reject them.

When the system detected your image's file size over the maximum file size you set, it will won't allow you to upload.
