Unfortunately, there is only 1 Joomla fullname custom field.

An alternative you can try is use standard fields like textarea field to create more fields for optional parts of user's names then change the format for the fullname field(http://take.ms/dzOAA) to single for example.

Do note that the fullname field is the field that EasySocial will use to display user's names.
