Hm, unfortunately it is not possible. You can only pick between real name, or username

real name is a combination of First Middle and Last Name?
Is there a way to use just one field, for example only First Name?

Real name is their full name. It is not possible to just use first name or last name currently.

Currently, username will act as nickname currently. But we have an option where you can set it to shown 'Single Name' as you can see here http://take.ms/fsljw on your current workflow.

If you do not want to have first, middle and last name on the custom field, you can configure this behavior in the custom field. Change this to "Single Name", http://take.ms/NhtnL
