how do is setup ffmpeg so that users can start uploading their own videos to the site
If you own the server, this could be a good source for you, http://trac.ffmpeg.org/wiki/CompilationGuide/Centos

If you do not own the server, best is to contact your web host to install it on their server.

P/S: Do take note that EasySocial requires at least FFMpeg version 2.6.x
