Regarding the default avatar for your users, look like you've mis-configure the user default avatar. From your image 1 ~ 4, the avatar is actually the profile avatar and not the user avatar. To setup the default user avatar, you need to upload your default avatar at the 'Default Avatar' tab in your profile type edit page. Please see http://take.ms/UgBjA

Once you've uploaded the default avatars for your profile type, you will need to mouse over to an image and click on the 'star' icon to select that image as the default user avatar. Please see http://take.ms/NXxpc

As for Group, Page and Event, currently EasySocial do not support default avatar for these items.

It looks like I uploaded the new avatar to the default tab, but didn't click on the star to make it the featured default avatar.

You might want to consider adding an option to upload default cover photos. The stars is a very strong choice.
