Hi,
a few questions.
1. How can I turn off the Menu for viewing only?
In reflection its much more than I need no one but admins will be writing blogs.

2. Categories menu when selected uses our home page template instead of our default inner page template where is the setting for altering this behaviour?

3. How to customise the menu itself to what I want people to be able to see one of your other templates looked like it might work but its not included in my package purchase.

Can you include some screenshots to your questions as I am not fully understanding the issues?
1. How can I turn off the Menu for viewing only?
Are you referring to the toolbar which you want to hide from non super users? http://take.ms/wfjS0
2. Categories menu when selected uses our home page template instead of our default inner page template where is the setting for altering this behaviour?
If you want to use different template from your other pages, you can create a Joomla menu item for that page, then set the template for that menu item as you can see in the screenshot(http://take.ms/GHxJY).
3. How to customise the menu itself to what I want people to be able to see one of your other templates looked like it might work but its not included in my package purchase.
I'm not fully understanding your question here. Do you mean you want include a template picker module for the frontend so users can switch between them? Or a theme picker as in our demo page(http://take.ms/FSXiz). Do note that templates(Joomla) and themes(EasyBlog) are different things.

3. No I dont want a template chooser. I was thinking if users or guests see the toolbar how can I customise it so they can only see the items I want them to see.

1. Yes its the toolbar I am referring too.

To turn this off altogether, go to Settings > Layout > Toolbar and disable the option "Enable Toolbar"

First, you could check out the settings under Settings > Layout > Toolbar and see if those settings are suitable for you.

Alternatively, you can customize the theme file for the toolbar. This would require simple modifications to the toolbar's theme file located in /components/com_easysocial/themes/wireframe/toolbar/default.php
