Can you provide some screenshots as to the pages and steps you used to assign the category, save and re-open the template so I can get a clearer picture of your issue here? Thanks.

Sure, see below for steps and screenshots;

1. open template
2. select default category
3. select 'update this template', save and close
4. re-open the same template
5. category from step 2 has not saved

EB Installed Version: 5.0.41
Joomla 3.6.5

I understand your question now.
I have double checked this and unfortunately, currently it is not possible to save the category when creating or updating a post template.
We appreciate your understanding on this.

Can this feature be added? It's seems a basic requirement of creating templates.

Yes please do Raymond, I think it's an essential requirement when creating templates - especially for clients. I think keeping it as simple as possible is a huge requirement.
