Because category titles and description are translated automatically, you can just use the text as COM_EASYDISCUSS_CATEGORY_TITLE and add these translations on your language file

how do i make this: COM_EASYDISCUSS_CATEGORY_TITLE for Vaccines, or do i simply just replace Title with Vaccine products?

Your title of the category would be COM_EASYDISCUSS_CATEGORY_TITLE_VACCINES . Then, in your language file, add the following,

COM_EASYDISCUSS_CATEGORY_TITLE_VACCINES="Vaccines"
