2. Is it possible to create a own Link, Button or Module (or anything else) to get a unregistered user the change to subscribe to a Post/Author/Category or hole Blog.
Here a example for our Target: a orange Box (Modul) with a Text "Click here to subscribe to our Blog-Categorie XYZ" and then you can give the name & e-mail adress
HI there,

Please find your inquiries below.

1. Is it possibe to change the the "Text-Information" of the Subscribe-Buttons. On the German Language its very bad translated.

You can translate this String, COM_EASYBLOG_SUBSCRIBE_BLOG at ../language/en-GB/en-GB.com_easyblog.ini
or do language override on string above as follows https://stackideas.com/docs/easyblog/administrators/how-tos/how-to-create-language-string-override

2. Is it possible to create a own Link, Button or Module (or anything else) to get a unregistered user the change to subscribe to a Post/Author/Category or hole Blog.

I would advice you to use ' EasyBlog - Subscribe Module ' as it can be choose which type of subscriptions you required as mentioned above as shown http://take.ms/EYGQb

Please advice
