So I have a question number one: How to hide subcategories on Forums Layout?
-> You can hide sub-categories to be display by:
1. Click EasyDiscuss>Settings>Layout>Category http://screencast.com/t/t5b8un3FNj

Second regarding the notification module:how to See all conversations and see all notifications redirect to custom page of my site?
-> There is no setting to redirect for ' See all conversations and see all notifications' but you can customize and edit it in these file:
JoomlaFolder/components/com_easydiscuss/themes/wireframe/conversations/popbox.php
JoomlaFolder/components/com_easydiscuss/themes/wireframe/notifications/popbox.php

You're suggested to backup the file that you want to edit beforehand for precaution

About the custom fields: Is it possible to show one of the custom field's inputs in forum layout ( that it would be visible without pressing on the discussion)?
-> Unfortunately, it is not possible currently
