Sorry for the delayed response.

I've checked and found that we didn't use language string for this. I've logged this into our issue tracker.
For now, i've already made the changes to use the language string, in below mentioned file paths.
/plugins/payplans/stripe/app/tmpl/form_sca.php
/language/en-GB/en-GB.com_payplans.ini

You need to find the language string as mentioned below and override it accordingly.

COM_PP_PAYMENT_APP_STRIPE_CARDHOLDER_NAME="Card holder Name"

Update us if you still have any issue.

We will add this language string in payplans. when new release of payplans available it will include in Transifix as well as.
