For the Blogs in All Authors view, there is a sorting drop-down options. What is the difference of 'Latest' and 'Latest Post'? Can I configure the sorting options from back end?

'Latest' is referring to the author, so latest author would be the newest author that signs up on the site. 'Latest post' orders the author by checking who created the latest post on the site.
Can I configure the sorting options from back end?
You can configure the default ordering in the backend(http://take.ms/aYlW6).

Glad to know you figured out the ordering.

For the options in the sorting dropdown list, there are no settings to remove them.

If you want, you would have to template override the following theme file: http://take.ms/gTipg
