Regarding on the showcase module layout issue during saving, I've applied the fix inside your /modules/mod_easyblogshowcase/mod_easyblogshowcase.xml and it should be saving correctly now.

Also, the module menu tabs are missing - Module, Menu Assignment, Module Permissions, Post Cover, Advanced

It seems like the issue is caused by your joomla backend as the issue is also occur on the joomla module itself. Refer "Login" module here, http://screencast.com/t/5fqbvbRCZHg . Perhaps you can try to change the backend template to another template and see how it goes.
