The dropdown that you see in the search filters are dependent on whether or not the extension has a finder plugin. If JReviews has a category plugin for finder, then it would be listed. Otherwise it wouldn't be listed.

These are translated in their own language files. For instance, for articles and categories they are located at the following locations:

/administrator/language/en-GB/en-GB.plg_finder_content.ini
/administrator/language/en-GB/en-GB.plg_finder_categories.ini

All of the language files for search plugins has a similar syntax plg_finder_xxxx.ini
