Correct me if I am wrong, do you mean you want to restrict profile type selection during registration yes?
If yes, you can go to users>profile types>[select profile type]>disable Allow in Registration https://take.ms/3jKa0

Changing it after profile creation.
User starts as "free user"
Then via menu option or script, is changed to "paid user"
