On my site I prevent people from Registering. I'd also like to remove the text 'Register' from the EasyBlog login dropdown as indicated in the attached image. How can I do that?

We should file a bug on this one.
If the Joomla Global Configuration set user registration as disable, the easyblog should use that as configuration and disable the registration links
