I am really sorry for the delay of this reply as it is a public holiday for us here.

Perhaps you can disable this notify to all the user option from backend > Easydiscuss > settings > notification > Notify all users on new post - NO and see is it meet your current requirement?

When you turn off this option, the system will not send any new discussion post email notification to your site user. Hope this will help.

I understand, but I want just one specific user not to receive notifications, not all users. Is it possible?

Try download my attachment file and replace into JoomlaFolder\components\com_easydiscuss\helpers\mailer.php , after that you have to open the file and modify this line of code and which email address you would like to exclude it. You can take a look of my screenshot below.
