Back to your issue, it seems like you did not set any tag inside your quickpost hence the related post will not appear. Try to create a new quickpost and then click on "More Options" button as you can see from my screenshot here in order to add tag, http://screencast.com/t/hGoqHljPxj .

Could we setup a module to display 'Blogs by same author' in a similar way to related blogs? And make it to only be used with Quick Posts?

Unfortunately we do not have that kind of module yet currently in easyblog.
