As of now you can't edit invoice create date from backend. Create date will be saved when invoice is created successfully.
Can you please tell you want to edit this date for every invoice or only specific invoice.

I would like to modify date only on specifics invoice.
Mainly for plans subscribed with offline payment.

You can write a script to change these dates or you can change it manually from database table also.
You need to change in #__payplans_invoice table and column name is created_date.
