Firstly, I would strongly advise you to upgrade to 5.1.5 as we have just released this a couple of hours ago. It addresses several issues with the modules and also other bug fixes and features as well.

In EasyBlog 5.1, you no longer need to use FTP to modify your e-mail templates. They can be edited right from the back end under Mail Activities -> E-mail Templates

The pagination settings for the entries of the category is inherited from the List Limit settings under your Joomla global configuration.

You can got to your Backend>Components>EasyBlog>Mails Activities>E-mail Templates as shown http://take.ms/eE5PZ and you can change them accordingly, based on your current situations, you can edit as shown 'template.php' as shown http://take.ms/f9WIv as this is the main template for our email.

Please give it a try and see how it goes

I looked at "template" but i dont find the entrys to delete the Logo of EasyBlog and the entrys

You can check on the codes and it is there as you can see here http://take.ms/JDrXF. You can change those code accordingly based on where those logos are included or maybe you can change it image on this path /media/com_easyblog/images/email and named your new image to "logo.png".

Those 'template.php' are main template for all type of email, and those options

"There is a new blog post published on the site" and "New blog post posted"

are controled each separately by it template, in your case, file name "post.new.php"as those are new blog post emails as you can see here http://take.ms/FEBbX

Oh, it seems that currently, those translations files you used is not fully updated to it latest version. Maybe you can try replace attached file at this path language/de-DE/de-DE.com_easyblog.ini and see how it goes
