I am sorry for the delay of this reply,

Unfortunately that was not possible to specify which category set private by default in current system.

But you can restrict which user group do not have permission to view that category discussion from backend > easydiscuss > category > select category > permission tab > who can view discussion in this category

I want all users to see the category with ability to post. However, they mustn't see the posts which will be created by other users.
Can I do it?

Yes, first you have to enable this option from backend > Easydiscuss > settings > general > workflow > posting private - YES

Second you have to download my attached file and replace into JoomlaFolder\components\com_easydiscuss\themes\simplistic\form.new.php , so It will set private post by default when the user trying to submit a new discussion.

But unfortunately that can't control which specify category set private by default.
