Have you activated the user (clicked on the activation link in the mail) As you can see on our site, one user who are "pending approval" is showing up everywhere (including on your screenshot)

Based on what i have tested, you are using "Normal Registration(Manual Login)" for your "Default" profile types as when user clicked on "Activate Now" it will automatically logged your user and shown on your streams. Maybe you can change them to "Require Admin Approval" as shown http://screencast.com/t/8srbpnfEZwRg

I am not sure why this happening to this particular user. Maybe you can provide us with your FTP and Database access for further check on this issues.

We would like for people who sign up using facebook or other social media to bee automatically approved, and people who sign up manually have to be approved by an admin (and therefore avatars or other pictures and albums should not be shown before they are approved)

Based on this requirement, you can achieved that by changing at your profile types and set "Single Sign On Registration Type" to "Normal Registration(Automatic Login)" for social registration and "Registration Type" to "required admin approval" for normal registraion(Easysocial Registration) as shown http://screencast.com/t/TNWxjNSeaJ

Honestly, i dont know how that user shown on your site as his account still under moderation. There could be many possibilities actually. Maybe there are some glitches on your site and if got another user, occurs this issues again, let us know.

By the way, based on my observations, that user should not be able to login or even upload any image unless his avatar image. But, have disabled this user and it should not shown on your recent and online users streams anymore as you can see here http://screencast.com/t/YCzLWlKC54j2. But, under albums, i have tested them locally, and it seems that i can replicated this issues. those albums should not shown if your have disabled them. I have issued this to our developer and this fixes will be included on our next released version.
