Is there a way to disable or at least toggle the password protection on a post to default to 'off'?
I've looked all over and I can't see it!

You may turn off this functionality under Settings > Editor as you can see from my screen shot here,

There is NO Settings -> Editor on my system. So how do you turn off automatic passwords?

May i know which automatic password you referring?
If you referring the password protection under Easydiscuss section, you can disable it from
backend > Easydiscuss > setting > tab > protection > Enable password protection - NO
