Do you mean you would like to translate it from backend > Easysocial > profile type > custom field section?

If yes, unfortunately those option unable to translate it from backend, unless you view these option on frontend and you translate those custom language translation into your frontend override language file e.g. JoomlaFolder/language/overrides/de-DE.override.ini

And I also realised you out those language constant into second columns from the custom field value, actually you shouldn't put language constant at there, let me explain more details regarding this :

First columns -> Normally you put value on this columns, it will appear the value as what you set.
Second columns -> Normally you put value on this columns, it will not appear on the page, but this value will store in database.
