I am really sorry but unfortunately it is not possible to remove a default category because when the composer loads up, it needs to have a default category to define those permissions etc.

This is a little inconvenience because almost every time the default category remains the primary one or one of the selected category because is a general one and the user tell him self "o, this category works too for my article"
If we have the possibility to limit the categories association to 1 and the check box to be radio then the user when select his category the default one is unchecked.
If we have the possibility to limit the categories association to 2 and the check box remains as it is then the user when select his categories and want to have more then 1, then he will uncheck the default one and select the one who is proper for his article.
