Hi, is it possible to give users more than one option for payment so they can choose which provider to use? We have PayPal AND Stripe but cannot see any way to offer more than one payment gateway at a time.

Yes, if you have created multiple payment instance of payment then user will be able to select one of them.
I have checked your site, you have created app for paypal only, create stripe instance and check again.
