Using Easy Blog for the first time and my client wants to have multiple blogs on a single website and a main blog that will be a combination of all. This client is an event company and will have single blogs for each coordinators events and the main blog will be of all events.

Is the best way to do this, by categories? Using each coordinators name as a category with their individual blogs just showing only their category. Then the main blog would be set for all categories (names)?

Yes, the best way I can think of is using category. You can create different menu item for each category. Means that you have Menu A (Single Category Layout), Menu B and Menu C which represent each category. And you can have Main Menu (Easyblog Frontpage Layout) which will show all blog posts regardless in which category the post is.

Unfortunately, you cannot assign single user but you can assign an usergroup to a particular category in Category Access: http://screen.stackideas.com/2015-01-20_2307.png
