I am really sorry for the delay of this reply as it is a weekend for us here.

Issue 1: I cannot change the author in each post manually - the post wont save off again.

I have checked in your post, it seems like all of them also do not have any content, for example : http://screencast.com/t/icyu2roxl
By the way, after I insert some of the content in this post (The Post Box Project Exhibition), it save successfully.
Perhaps you can share with me which post can't save even content is existed.

Issue 2: I cannot get the tool bar to appear in any of the themes. I have all the tool bar settings turned on, but cant get it to appear. I need this feature to allow our users to login.

I have help you re-save the ACL settings from Easyblog backend, now the toolbar appear on your site.
