If you go to the back end of Joomla and open EasyBlog 5 and go to Dine South of the Border in Epcot's Mexican Pavilion, you can see that the links are working in the post, but when you go into the article on the front end you can see that the article does not show the links. if you put the mouse over the link you cursor changes to the hand to click on the link. Am I doing something wrong? Are we linking wrong?

Also I have changed the maximum amount of Tags on a post, but my Authors can post more then 5. Not sure how to fix this so that they can only do 5 max. We only want 5 tags per post not more then that.

-> You're not doing it wrong to be honest, it's actually caused by your current template that make the link text to have black in color, as you can see my video here: http://take.ms/2E3wK , when you hover on the link text its change to blue color (its actually working) and its not only happened in content link, where you can see links for author below and tag as well. And as I try make the blog post load without you current template, it was shows blue color links : http://take.ms/WghGz
Fret not, you actually can do css override for this by:
1. Click themes>custom css
I've make links to blue in color(you can change it according to your preference )

-> Seems like you've create the category tag to have default tag: http://take.ms/WJx0Z http://take.ms/CvbaU http://take.ms/IAgpW http://take.ms/FQYSb , so as you select the categories, http://take.ms/h2bPe by default it will use the tags that has been set according to the categories.
