Hi Chris,
It seems after disabling JCH Optimize 'Combine CSS and javascript files' setting and taking another look at the frontend, the template seems be applying this rule that causes the blog entry to not display properly(http://take.ms/oWJpT). Can you consult your template provider and see if anything can be done on their end to rectify this? Do note that there are minor changes to our css styling in EasyBlog 5.1(reference).
You probably have to consult your template provider on how to clear the template cache too if any change is made on your template. Also, disable JCH Optimize temporarily and clear Joomla's cache while and after your do this.
After you have done all those, you can test the frontend again with and without JCH Optimize enabled to see how it goes.
