I'm looking for a way to keep individual categories independent and on separate menus, and I can't seem to find a way to control which categories are accessible on a particular menu. Similarly, when using the ask module, is there any way to restrict the user to posting in a specific category rather than being able to select an option?

You can create single category menu item for it by:
1. Click menus>add new menu item: http://take.ms/KPw57

Thanks for the reply. The issue is, I want to be able to confine a user to strictly a single category per menu item. Currently, if the user chooses to post, they can post to any accessible category despite which menu they're posting from. They can also click " Forums" at any time and all accessible categories are visible. I'm looking to make each category essentially inaccessible/invisible unless accessing directly through the intended menu. I've included some screenshots below to help point to the issue.

Thanks for the screenshots, I understand better now. If this is the issue, unfortunately, it is not possible currently.
Perhaps, you can create a ticket under feature request, so our developers can keep track the feature that might be included in the incoming release
