I use Mailchimp to send out newsletters and would like to include say 6 of the most recent topics posted on my site automatically. Or at least without having to put each one in manually linking to the forum post, if that makes sense...

Could you give me an idiots step by step guide as to how to achieve this please?

We don't currently have any integrations with Mailchimp for EasyDiscuss. Instead, you could enable the email digest feature in EasyDiscuss, http://imarklee.stackideas.com/Monosnap_2017-08-04_23-15-20.png

E-mail digest sends notification to users based on their configured interval as you can see here, http://take.ms/aVdUa

Thanks that looks interesting, I had completely overlooked that feature....

Is there a way to turn on site-wide subscription for everyone as default?

Currently that was not possible to turn on this site-wide subscription by default at this point of time.

I assume you would like to send email notification when new discussion published on your site right?

If yes, you can actually turn on this email notification setting "Notify all users on new post" from backend, so when the new discussion published, system will send email notification to all of your existing registered user.
