Actually that is a little bit tricky is because the Joomla media manager doesn't allow user to create as a gallery, so it will be very difficult to map it back if user would like use back Joomla interface to edit the blog post.

all our users work in frontend so it's not an issue.

In order for us to be able to do what we do in EasyBlog, we need to have greater control over the output and because these are essentially Joomla articles, it's not going to be as easy as it seems.

However, since it is a Joomla article to begin with, you could always install 3rd party plugins should you need to render a gallery
